In my opinion, a good roast beef sandwich starts with the most amazing beef roast. Use this easy sirloin tip roast beef recipe to make a roast that you can later cut into slices.

Alternately, you can go to the deli counter and ask for their best cut of meat. Have the butcher cut it into thick slices to use in this recipe. The thicker cut of meat adds to the rich flavour of this sandwich.

Roast Beef Sandwiches Recipe:

Ingredients:

  • 4 brioche style buns
  • 2 cups (500g) leftover roast beef, thinly sliced*
  • 1/2 cup homemade garlic aioli**
  • Butter lettuce or green leaf lettuce

*deli roast beef works as well but we love to use the leftovers from this mouth watering roast beef recipe. They make the best roast beef sandwiches!

**mayonnaise can be used instead of aioli, yawn.

Directions:

1. Thinly slice the roast beef.

2. Open the buns and cover both sides with aioli. Place on a parchment lined baking sheet.

3. Toast the buns, open faced in the oven on low broil setting for a minute or two.

4. Layer the bottom bun with roast beef, more garlic aioli, lettuce and add the top bun.

This recipe makes 4 beef sandwiches and is the perfect way to use roast beef leftovers and create a whole new meal for the family. The leftovers can be covered in plastic wrap or put in an airtight container and refrigerated for up to three days.

The beauty of this leftover roast beef recipe is that it’s super versatile!  We, of course, love it just as it is but you can add literally any kind of topping that you choose! Cheese sauce, blue cheese, mustard, horseradish mayo… the sky is the limit.

Tips & Substitutions:

  • Try making this creamy horseradish sauce or alabama white sauce to use instead of aioli. Even our homemade bbq sauce would be delicious!
  • Add red onion, caramelized onions, plum tomatoes, sauteed red peppers or slices of roma tomato.
  • Change it up by adding mozzarella cheese, pepper jack cheese or cream cheese.
  • Use deli meat, like sliced roast beef or prime rib instead of a homemade roast.
  • Instead of brioche use hoagie buns, garlic bread or hawaiian rolls.
