Smoking the burgers first makes them easy to then wrap in bacon and cook on the grill. Having the patties already cooked speeds up the overall cook time of the burgers once you add the bacon.

How Long Should Burgers Be Smoked?

We like to smoke our burgers at 165 degrees F for two hours or at 225 degrees F for an hour, if we are in a hurry. If you don’t have extra time, they can be smoked at a higher temperature for a shorter period of time.

Bacon-Wrapped Burger Recipe

Ingredients

  • Ground beef โ€“ Go for lean ground chuck if you can; it’s got the perfect fat-to-lean ratio for juicy burgers without the grease overload.
  • Ground pork โ€“ This adds moisture and richness, giving the burgers a next-level flavor combo that beef alone canโ€™t deliver.
  • Homemade BBQ sauce โ€“ We love using our homemade version or this Sweet Baby Ray’s Hickory & Brown Sugar for that bold, sweet heat.
  • Large egg โ€“ This little guy is your burger glue, holding the meat mixture together like a champ.
  • White onion, finely diced (optional) โ€“ Adds a little bite and sweet-savory depth, especially if you dice it tiny.
  • Hamburger seasoning โ€“ Our homemade seasoning is delicious! This Montreal steak spice is another classic.
  • Garlic powder โ€“ A pantry staple that makes everything taste like you know what you’re doing.
  • Bacon slices, two for each burger โ€“ Because more crispy bacon = more happiness.

Costco has the best deal on ground beef and I buy a large pack at least once a month.

Instructions

1. In a large mixing bowl, combine the ground meats. Mix well.

2. Add the BBQ sauce, egg, and spices to the meat mixture.

3. Combine until everything is mixed thoroughly.

4. Form the mixture into burger patties that are about 5 oz each.

5. Layer the patties between sheets of parchment paper on a sheet pan for easy handling.

6. Place burgers on the Traeger smoker at 165 degrees F and allow them to smoke for two hours.

7. When ready to serve, turn the Traeger up to 350 degrees.

8. Wrap each patty in two slices of bacon.

Tip: Overlap each piece of bacon slightly so that it sticks together. You can also hold the bacon strips in place with a toothpick if needed.

9. Place the burgers on the grill grate and cook for 10 minutes.

10. Flip each burger and cook for an additional 10 minutes or until the bacon is cooked thoroughly.

Tip: Cook until the internal temperature reaches 160 degrees F with a meat thermometer. For crispy bacon, cook on the hottest section of the grill.
