Tips for Cooking With Cast Iron
- When cooking with a cast iron dutch oven, be sure to season the surface first.
- Always use gloves or oven mitts while cooking as the surface of the iron will be hot.
- Cook the recipe over an open fire using hot coals, not open flames. A fire that is too hot will burn the outside of your recipe and not cook the inside.
- Be sure to clean the cast iron with a rough vegetable scrubber, rinse and dry thoroughly before storing.

Dutch Oven Breakfast Casserole
This easy camping recipe is full of cheddar cheese, eggs, bell peppers and tater tots – the perfect addition to your next camping trip! The whole family loves this delicious breakfast and I love how quick it is to make with very little prep work.
Ingredients
- Tatertot hash browns
- Bell pepper, diced
- White onion, diced
- Cooked ham, diced
- Eggs
- Cheese, shredded
- Green onion, diced
- Salt & pepper
Instructions
- Dice the pepper, onion and ham.
2. Mix the egg, cheese, salt & pepper in a medium bowl.
3. Place the ingredients into a large freezer bag for easy packing and storage.
Tip: prepare the ingredients at home, in advance. This makes prepping and clean up a breeze when camping.
4. Line the inside of the dutch oven with parchment paper (this is optional but helps with clean up and serving later).
5. Layer hash browns on the bottom of the dutch oven.
6. Pour egg mixture over the tater tots.
7. Place the lid on the dutch oven and bake for 60 minutes over the coals of a campfire or in an oven at 350 degrees.
8. Top with green onions before serving.
