This crockpot Tuscan soup recipe has quickly become one of our family favorites. It’s so full of rich, delicious Italian flavors that you won’t believe this dish is low carb!

I seriously love adapting our family favorite recipes to be low carb and keto friendly. This soup reminds me of the Italian wedding soup that we used to get at the Olive Garden!
How to Make Keto Crockpot Tuscan Soup
No crockpot? No problem!
Instead of using a slow cooker, this recipe can be cooked on the stovetop in a large stock pot or in the Instant Pot. I often do this when I’m short on time.
Simply sauté the sausage until cooked through, drain any excess grease, then add the remaining five ingredients and simmer for 30 minutes. Add spinach and cream and simmer an additional ten minutes.
Ingredients
- Mild Italian sausage, cooked and drained – The star of the soup, adding a savory and slightly spiced flavor.
- Onion, chopped – A simple ingredient that creates a flavorful base, especially when sautéed with the sausage.
- Garlic cloves, minced – A little fresh garlic adds a fragrant kick.
- Dried oregano – This classic Italian herb is a must.
- Sun-dried tomatoes, drained and chopped – These little gems add bursts of tangy sweetness and rich tomato flavor.
- Chicken broth – The savory, comforting foundation for all the ingredients to simmer in.
- Spinach, chopped – A healthy addition that wilts into the broth for a pop of color and freshness.
- Heavy cream – The secret to making the broth rich and creamy.
- Freshly grated parmesan cheese, for serving – The perfect finishing touch with its salty, nutty flavor.
Instructions
1. Add the first six ingredients to the crockpot.
2. Cook on low for four to six hours.
3. Half an hour before serving, stir in spinach and heavy whipping cream.
4. Top with parmesan before serving.
Tips for Making This Keto Crockpot Soup
- Hot Italian sausage can be substituted for mild.
- Red pepper flakes would also add a bit of heat.
- Add salt, pepper, or other seasonings according to your taste.
- Fresh or frozen spinach both work for this dish.
- Adding riced cauliflower would make this recipe even more hearty.
- Other yummy additions could include kale, celery, carrots, white beans, roasted red peppers, or diced Yukon gold potatoes.

- 1 tsp dried oregano
- 1/2 cup sun-dried tomatoes drained and chopped
- 6 cups chicken broth
- 1 1/2 cup spinach chopped
- 3/4 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese for serving
