How to Make 90-Second Mug Bread

Ingredients

  • Butter, melted โ€“ You can also use olive oil, avocado oil, or coconut oil if you prefer.
  • Almond flour โ€“ The secret to a soft, fluffy texture. If youโ€™re out, try coconut flour, but reduce the amount.
  • Baking powder โ€“ The magic that makes it rise. Make sure itโ€™s fresh for the best fluffy bread.
  • An egg โ€“ Holds it all together and adds protein, but donโ€™t worry, the bread wonโ€™t have that dreaded eggy taste.
  • Pinch of salt (optional) โ€“ Even a little makes a difference.

Instructions

1. Combine the ingredients in a microwave-safe bowl or mug. Be sure to mix all of the ingredients thoroughly or the bread will have a funny consistency and be too dry or too moist in spots.

2. Microwave on high for 90 seconds.

3. Let it cool slightly, then pop it out and slice it. Enjoy as-is or toast it for extra crunch!

I experiment with this recipe all the time! Because it’s a single serving, the ingredients are not that expensive, so why not mix it up? Try adding stevia, cinnamon, garlic powder, salt, rosemary, true lemon, cocoa, etc. Just not all at once! 

You can also put the ingredients into an oven-safe dish and bake for 15 minutes at 350ยฐF if you want to avoid the microwave all together. Or pour the batter into silicone muffin liners for quick low-carb cupcakes to take to your next party.
