Everyone enjoys a delicious Thanksgiving meal, but what do you do with all of those Thanksgiving leftovers? The last thing I want to do after a big holiday meal is to do more cooking, so the next day is all about the leftovers.

One of the easiest ways to enjoy your leftovers is just to heat up a plate of turkey meat, mashed potatoes, leftover stuffing, and sweet potato casserole, all smothered in extra gravy. All those delicious leftovers are wonderful, obviously, but sometimes I want something different than that.

Of course, you can always make a quick roast turkey sandwich. Making sandwiches is one of my favorite ways to use any extra meat that is left after a big meal.

Today I am sharing a great recipe that takes your simple turkey sandwich to the next level. The best part is that the whole thing only takes a few minutes to put together and I only need to dirty a pan and a knife!

Leftover Turkey Melt Sandwich Ingredients

Ingredients

  • 1 loaf french bread, sliced
  • ½ pound turkey, cooked and sliced
  • ¼ cup cranberry sauce
  • ¼ cup butter
  • 8-10 slices of provolone cheese

Instructions

  1. Cut slices into the loaf of bread using a sharp knife, about 1/2″ apart and not all the way through to the bottom.  

2. Butter the inside of every second slice.

3. Then stuff the opening with several slices of turkey.

4. Layer that with a slice of cheese.

5. Add a tsp or two of cranberry sauce.

6. Wrap the entire loaf in aluminum foil. You may need to use two layers to reach all the way around the sandwich.  

7. Place the package in the oven at 350 F.

8. Cook until the cheese melts and the loaf is heated through, about 20 minutes.

9. To serve, simply slice all the way through the bread to cut it into individual turkey sandwiches.

Substitutions

  • Try making this homemade cranberry sauce or cranberry salsa to go with Thanksgiving dinner. Then used the leftover cranberry sauce in this easy sandwich recipe.
  • Turkey breast and dark meat are both equally tasty in this sandwich. Use what you prefer.
  • Add diced grapes, apples, or dried cranberries instead of cranberry salsa.
  • Once heated, add some fresh avocado and thinly sliced red onions to your hot turkey sandwich.
  • Change it up by adding monterey jack cheese, using whole wheat bread, and adding fresh spinach leaves.
  • Use deli turkey, oven roasted chicken, or beer can chicken breast instead of roasted turkey.
  • Add leftover ham, stuffing, yams, or cooked carrots.
  • Instead of a french bread loaf, use slices of bread and a panini press to make a turkey melt.
